  • 1 tablespoon extra-virgin olive oil
  • 1 medium onion, diced
  • 1 cup long-grain white rice
  • 4 cups vegetable broth
  • 1 bunch rainbow chard, stems and leaves separated
  • Sea salt and freshly ground black pepper, to taste

Instructions

  • Begin by heating a large pot over medium-high heat
  • Add 1 diced onion and sauté for 3-4 minutes until the onion begins to soften.
  • Next, add 1 cup of long grain white rice and stir to combine
  • Bring the mixture to a boil, then reduce heat to medium-low and let simmer for 15 minutes.
  • In the meantime, rinse 1 bunch of rainbow chard and remove the stems
  • Add the chopped chard stems to the pot and simmer for an additional 5 minutes.
  • Finally, add the chard leaves and cook for 3-4 minutes or until the leaves are wilted.
  • Season the soup with sea salt and freshly ground black pepper to taste.
  • Serve the soup warm and enjoy the vibrant colors and flavors of nature.
