Ingredients
- 1 cup red lentils
- 2 tablespoons oil, (preferably coconut or ghee)
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds
- 2 cups vegetable stock
- 1/2 teaspoon turmeric
- 4 cups fresh spinach, chopped
- Salt, to taste
- Basmati rice, for serving
- Fresh herbs, for garnish (optional)
Instructions
- Begin by soaking the red lentils in cold water for at least 45 minutes
- Heat 2 tablespoons of oil in a large pot over medium heat
- Add in the red lentils, 2 cups of vegetable stock, and 1/2 teaspoon of turmeric
- Stir in the chopped spinach and season with salt to taste
- Serve hot with a side of basmati rice and a sprinkle of herbs
