- Preheat the oven to 375°F.
- Heat a large skillet over medium heat
- Add 1 cup of red lentils to the skillet and cook for an additional 2 minutes, stirring occasionally.
- Pour in 4 cups of vegetable stock and 1 cup of diced tomatoes
- Add 1 cup of chopped kale and cook until the kale is softened and the lentils are cooked through, about 2 minutes.
- Season with 1 teaspoon of sea salt and ½ teaspoon of black pepper.
- Transfer the lentil and kale mixture to a 9x13-inch baking dish.
- In a medium bowl, combine 1 cup of cooked quinoa, ½ cup of toasted slivered almonds, and ½ cup of crumbled feta cheese.
- Sprinkle the quinoa mixture over the lentil and kale mixture.
- Bake for 15 minutes until the top is golden and bubbly.
- Remove from the oven and let cool for 10 minutes before serving.
