Ingredients
- 1 large organic red pepper, diced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup cooked organic lentils
- 4 cups vegetable broth
- Sea salt and freshly ground black pepper, to taste
- Fresh parsley, for garnish
Instructions
- Begin your journey with a deep breath and a moment of gratitude for the nourishing ingredients you have before you.
- Chop 1 large red pepper into cubes.
- Heat 2 tablespoons of olive oil in a large pot over medium heat.
- Add the red pepper and sauté for 3 minutes.
- Pour 4 cups of vegetable broth into the pot and bring to a boil.
- Reduce heat and simmer soup for 15 minutes.
- Blend soup with an immersion blender or in a countertop blender until smooth.
- Add salt and pepper to taste.
- Garnish with a sprinkle of parsley and serve.
