Ingredients
- 1 cup short grain brown rice
- 2 cups seasonal vegetables, such as bell peppers, carrots, zucchini, and/or mushrooms
- Extra virgin olive oil
- Sea salt
- Freshly ground black pepper
Instructions
- Preheat the oven to 425°F.
- Cut the vegetables into bite-sized cubes, and place on a baking sheet
- Roast the vegetables for 25-30 minutes until golden brown.
- Meanwhile, bring a large pot of water to a boil
- Drain the cooked rice in a colander and rinse with cold water
- Add the roasted vegetables to the bowl with the rice.
- Serve warm or chilled.
