Ingredients
- 4 medium-sized beets
- 2 cups cooked quinoa
- 2 cups baby arugula, washed and dried
- 1/4 cup feta cheese, crumbled
- 1/4 cup toasted pecans
- 2 tablespoons extra virgin olive oil
- 1 tablespoon freshly squeezed lemon juice
- 1/2 teaspoon honey
- 1 shallot, minced
- 1/2 teaspoon minced garlic
- 1/2 teaspoon dried oregano
Instructions
- Preheat oven to 400°F.
- Wash and trim the beets
- Spread the beets onto a parchment paper-lined sheet tray
- Cook the quinoa according to package instructions.
- Combine the cooked quinoa, roasted beets, arugula, feta cheese, and pecans in a bowl.
- Pour the dressing over the beet and quinoa mixture and toss gently to combine.
