- Preheat your oven to 375°F.
- Peel and cube the pumpkin and place it onto a baking sheet.
- Drizzle the pumpkin with olive oil and sprinkle with salt.
- Roast the pumpkin for 20 minutes, stirring halfway through.
- In the meantime, mix the tahini, honey, and sesame seeds together in a bowl.
- Once the pumpkin is finished roasting, mix it into the tahini mixture.
- Scoop the mixture into a parchment-lined 9x13 inch pan.
- Bake for 20 minutes.
- Allow the bars to cool before slicing into bars.
- Enjoy your roasted pumpkin and sesame seed bars with a sense of joy and clarity.
