- Celery

Instructions
- Heat a large pot over medium heat
- Add 4 cups of vegetable stock and 1 teaspoon of sea salt
- Check to make sure the vegetables are tender
- When the vegetables are tender, add a can of diced tomatoes and a tablespoon of dried oregano
- Taste the stew and adjust the salt and pepper as needed.
- Serve the stew in individual bowls and garnish with fresh herbs.
