This ethereal pudding, imbued with the essence of roses and the heartiness of almonds, is a treat for the senses, deeply rooted in Ayurvedic principles for holistic well-being.
Equipment
Ingredients
- 1 cup fine semolina
- 3 cups almond milk unsweetened
- 1/2 cup organic coconut sugar or a sweetener of choice
- 2 tablespoons high-quality rose water plus extra for garnish
- 1/4 cup almonds finely chopped and lightly toasted
- 2 tablespoons clarified ghee
- 1 teaspoon sakura cherry blossom powder
Garnish:
- Organic rose petals edible and fresh
- Toasted sliced almonds
- A light drizzle of rose-infused syrup optional
Instructions
Roast Semolina:
- In a heavy-bottomed pot, heat ghee over medium heat. Add semolina and roast for 3-4 minutes until fragrant and golden, stirring continuously to prevent burning.
Infuse with Almond Milk:
- Slowly pour in the almond milk while whisking continuously to avoid lumps. Ensure the mixture is smooth.
Sweeten and Thicken:
- Stir in coconut sugar or your chosen sweetener. Add sakura powder at this stage. Cook on medium heat, stirring constantly, until the mixture thickens to a pudding-like consistency.
Flavor with Rose:
- Once thickened, remove from heat. Gently stir in the rose water and toasted chopped almonds.
Serve with Elegance:
- Transfer the pudding into individual serving bowls. Let it cool slightly.
- Garnish each bowl with a sprinkle of fresh rose petals, toasted sliced almonds, and a few drops of rose-infused syrup for an added touch of luxury.
Additional Garnish Option:
- For a visually stunning presentation, dust a small amount of sakura powder over the top of the pudding just before serving.
