- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon freshly ground saffron threads
- 1 cup softened butter
- 1 cup light brown sugar
- 1 large egg
- 1 tablespoon pure vanilla extract
- ½ cup rolled oats
- ½ cup chopped dates
Instructions
- Preheat your oven to 350°F.
- In a medium bowl, whisk together the dry ingredients: 1 ½ cups all-purpose flour, 1 teaspoon baking powder, 1 teaspoon ground cinnamon, and ½ teaspoon of freshly ground saffron threads.
- Add 1 tablespoon of pure vanilla extract and 1 large egg and mix until fully incorporated.
- Gradually add the dry ingredients to the wet ingredients, stirring to combine.
- Add ½ cup of rolled oats and ½ cup of chopped dates and mix until evenly distributed.
- Line a baking sheet with parchment paper and spoon tablespoon-sized balls of dough onto the parchment.
- Bake for 8-10 minutes until golden brown.
- Let cool for 10 minutes before transferring to a cooling rack.
