Ingredients
- 1 cup organic quinoa
- 1 teaspoon saffron threads
- 2 ½ cups vegetable broth
- 1 cup diced organic carrots
- ¾ cup diced organic celery
- ½ cup diced organic onion
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon freshly minced garlic
- 1 teaspoon dried thyme
- 1 teaspoon sea salt
- ¼ teaspoon freshly ground black pepper
Instructions
- Begin by gathering your ingredients: 1 cup quinoa, 1 teaspoon saffron threads, 2 ½ cups vegetable broth, 1 cup diced carrots, ¾ cup diced celery, ½ cup diced onion, 2 tablespoons olive oil, 1 tablespoon minced garlic, 1 teaspoon dried thyme, 1 teaspoon sea salt, and ¼ teaspoon black pepper.
- Start by prepping the quinoa
- In a medium saucepan, add the vegetable broth and saffron threads
- Once boiling, add the rinsed quinoa and reduce the heat to low
- While the quinoa is cooking, prepare the vegetables
- Add the garlic, thyme, salt, and pepper and cook for an additional minute.
- Once the quinoa is finished cooking, add it to the vegetable mixture and stir to combine.
- Serve the saffron-scented quinoa & vegetable medley warm.
