Ingredients
- 1 cup of organic mung beans, soaked in warm water for 30 minutes

- 1/2 teaspoon of ground turmeric
- 1/4 cup of freshly chopped cilantro
- Organic vegetables (of your choice) for serving
Instructions
- Begin by soaking 1 cup of mung beans in warm water for 30 minutes.
- In a medium saucepan, heat one tablespoon of coconut oil on medium-high.
- Reduce the heat to medium-low and add the mung beans.
- Simmer the mung beans, stirring occasionally, for 15 minutes.
- Once the mung beans are tender, remove the pan from the heat.
- Transfer the mung beans to a food processor or blender, and add 1/4 cup of fresh cilantro.
- Blend the mixture until it is a thick and creamy consistency.
- Place the dip in a serving bowl and garnish with fresh cilantro.
- Serve the dip with your favorite vegetables.
