Ingredients
- 1 lb dry pasta shells
- 2 tbsp extra-virgin olive oil
- 2 cloves garlic, minced
- 2 cups fresh baby spinach
- 1 cup grated mozzarella cheese
- 1/2 cup grated parmesan cheese
- Salt and pepper to taste
Instructions
- Begin by bringing a large pot of salted water to a rolling boil.
- Once boiling, add the pasta and cook for 8-10 minutes, stirring occasionally to prevent sticking.
- While the pasta is cooking, prepare the spinach and cheese filling
- Add the cheese and stir until it is fully melted.
- When the pasta is done cooking, drain it and reserve 1/2 cup of the cooking liquid.
- Add the pasta to the spinach and cheese mixture and stir until it is combined
- Transfer the pasta to a baking dish and bake in preheated oven at 350F for 15-20 minutes or until the top is golden and bubbly.
- Remove from oven and serve warm
