Ingredients

  • 1 lb dry pasta shells
  • 2 tbsp extra-virgin olive oil
  • 2 cloves garlic, minced
  • 2 cups fresh baby spinach
  • 1 cup grated mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • Salt and pepper to taste

Instructions

  • Begin by bringing a large pot of salted water to a rolling boil.
  • Once boiling, add the pasta and cook for 8-10 minutes, stirring occasionally to prevent sticking.
  • While the pasta is cooking, prepare the spinach and cheese filling
  • Once the oil is hot, add the garlic and stir for 30 seconds
  • Add the cheese and stir until it is fully melted.
  • When the pasta is done cooking, drain it and reserve 1/2 cup of the cooking liquid.
  • Add the pasta to the spinach and cheese mixture and stir until it is combined
  • Transfer the pasta to a baking dish and bake in preheated oven at 350F for 15-20 minutes or until the top is golden and bubbly.
  • Remove from oven and serve warm
