Ingredients
- 2 tablespoons extra-virgin olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup organic red lentils
- 4 cups vegetable broth
- 1/2 teaspoon ground cumin
- 4 cups baby spinach
- Sea salt and freshly-ground black pepper, to taste
- Freshly-squeezed lemon juice, for serving
- Chopped fresh parsley, for garnish
Instructions
- Add 1 cup of dried red lentils and stir together.
- Pour in 4 cups of vegetable broth and 1/2 teaspoon of ground cumin.
- Bring the broth to a boil and then reduce the heat to a simmer
- Once the lentils are tender, add 4 cups of fresh spinach and stir until wilted.
- Taste and season with salt and pepper as desired.
- Serve the soup hot and garnish with lemon wedges and a sprinkle of freshly chopped parsley.
- Enjoy the warmth of the broth and the nourishing blend of flavors.
