Ingredients
- • 1 cup of organic basmati rice
- • 2 cups of warm filtered water
- • 2 tablespoons of cold-pressed extra-virgin olive oil
- • 1 cup of fresh organic baby spinach leaves
- • 1 fresh organic tomato, diced
- • 3 cups of hot filtered water
Instructions
- Start by soaking 1 cup of basmati rice in 2 cups of warm water for 15 minutes.
- While the rice is soaking, prepare the spinach and tomatoes
- Heat 2 tablespoons of olive oil in a large saucepan over medium-high heat.
- Add the spinach and tomato to the pan and sauté for 5 minutes, stirring occasionally.
- Once the vegetables are cooked, add the soaked basmati rice to the pan and stir to combine.
- Pour in 3 cups of hot water and bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pan, and let the rice simmer for 25 minutes.
- Once the rice is cooked, remove the pan from the heat and let it sit for 10 minutes.
- To finish, fluff the cooked basmati rice with a fork and serve in individual bowls.
