Ingredients
- 2 bunches fresh, organic spinach, washed and dried
- 1/4 cup toasted sesame seeds
- 1 cup besan (chickpea) flour
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon dry mango powder
- 1 teaspoon garam masala
- 1 teaspoon ground ginger
- 1 teaspoon ground turmeric
- Himalayan pink salt, to taste
- 2-3 tablespoons cold, filtered water
- ¼ cup cold-pressed, unrefined virgin coconut oil
Instructions
- Rinse the spinach and pat dry with a kitchen towel.
- Slowly add the water to the dry mixture, stirring constantly until a thick batter is formed.
- Heat the oil in a skillet over medium-high heat.
- Dip each spinach leaf in the batter and carefully place it in the hot oil
- Flip and fry the other side for an additional two minutes.
- Transfer the pakoras to a paper-towel lined plate to absorb any excess oil.
- Enjoy your pakoras while still warm, and savor the sweet, serene flavors of spinach and sesame.
