Ingredients

  • 1 cup organic rolled oats divided
  • 1 cup puffed amaranth divided
  • 1/2 cup blueberry puree blend fresh or thawed frozen blueberries into a smooth puree
  • 1/2 cup raw honey or pure maple syrup divided
  • 1/2 cup virgin coconut oil divided
  • 1/2 cup almond butter divided
  • 1 tbsp spirulina powder
  • 1 tsp natural blue food coloring blue spirulina or butterfly pea powder
  • 2 tsp pure vanilla extract divided
  • A pinch of Himalayan pink salt divided
  • Food-grade edible holographic glitter e.g., "Fancy Sprinkles' Prism Powder"

Instructions

Base Preparation:

  • Line an 8x8 inch baking dish with parchment paper, leaving an overhang on all sides.

Process Oats:

  • Blend the rolled oats in a food processor until they reach a fine flour consistency.

Prepare Dry Mix:

  • In a bowl, mix the oat flour with the puffed amaranth.

Prepare Wet Mixes:

Divide Dry Mix:

  • Divide the dry oat and amaranth mixture evenly between two bowls.

Create Colored Mixtures:

  • Mix the spirulina powder into one of the wet mixtures until well combined for the green color.
  • Mix the blueberry puree and natural blue food coloring into the other wet mixture for the blue color.
  • Pour each colored wet mixture into the separate bowls of dry mix and stir until just combined.

Swirling Technique:

  • Alternately spoon the green and blue mixtures into the prepared baking dish.
  • Drag a butter knife or skewer through the mixtures in a swirling motion to create a marbled effect.

Setting:

  • Smooth the top with a spatula or piece of parchment paper, pressing down firmly to ensure the mixture is compact.

Chill:

  • Place the dish in the refrigerator
  • and chill for at least 2 hours, or until the mixture is firm enough to cut.

Glitter Application:

  • After chilling and just before slicing, remove the bars from the dish using the parchment paper overhang. Sprinkle the top evenly with edible holographic glitter to achieve the desired sparkly effect.

Cutting:

  • With a sharp knife, cut the set mixture into bars. For cleaner edges, clean the knife between cuts or dip it in hot water and dry it off.

Serving:

  • Serve the bars chilled or at room temperature. If serving later, store in an airtight container with parchment paper between layers to prevent sticking.
