Ingredients
- 4 quarts lightly salted water
- 1 pound lasagna noodles
- 1 tablespoon olive oil
- 1 chopped onion
- 1 large diced acorn squash
- 1 cup fresh spinach leaves
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup freshly grated Parmesan cheese
- 1 tablespoon Italian seasoning
- Salt and pepper Seasoning to taste
Instructions
- Preheat oven to 400 degrees Fahrenheit.
- In a large pot, bring 4 quarts of lightly salted water to a boil.
- Add 1 pound of lasagna noodles and cook until al dente, about 8 minutes.
- Drain noodles and rinse with cold water
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add 1 chopped onion and sauté until softened, about 5 minutes.
- Add 1 large diced acorn squash and sauté for an additional 5 minutes.
- Add 1 cup of fresh spinach leaves and season with salt and pepper
- In a medium bowl, combine 1 cup of ricotta cheese, 1 cup of shredded mozzarella cheese, and 1/2 cup of freshly grated Parmesan cheese.
- Spray a 9x13 inch baking dish with cooking spray.
- Spread 1/2 cup of your cheese mixture in the bottom of the dish.
- Layer 4 lasagna noodles, 1/4 of squash mixture, and 1/4 of remaining cheese mixture.
- Repeat layers, ending with a final layer of noodles.
- Spread remaining cheese mixture over top layer and sprinkle with 1 tablespoon of Italian seasoning.
- Cover dish tightly with foil and bake for 25 minutes.
- Remove foil and bake for an additional 10 minutes, or until top is golden and bubbling.
- Let lasagna stand for 10 minutes before serving.
