Instructions
- Begin by gently rinsing 2 cups of fresh strawberries under cold water, then hull and slice them into quarters.
- In a small saucepan, combine 1/4 cup of water with 1 tablespoon of dried elderflowers and bring to a simmer over low heat. Allow it to infuse for about 5 minutes, then strain to remove the elderflowers, reserving the scented water.
- Lightly crush 1 teaspoon of whole black peppercorns using a mortar and pestle, ensuring they are coarsely ground to release their aromatic oils without becoming too fine.
- In a mixing bowl, whisk together the infused elderflower water, 2 tablespoons of honey (or maple syrup if preferred), and the crushed black pepper until well combined.
- Gently toss the strawberries in the elderflower and black pepper syrup, ensuring that the slices are evenly coated with the mixture.
- Allow the strawberries to macerate at room temperature for 10 to 15 minutes, which will allow the flavors to meld and the fruit to release some of its natural juices.
- While the strawberries are macerating, prepare a simple elderflower dressing by mixing 3 tablespoons of cold-pressed coconut oil with 1 tablespoon of elderflower cordial and a teaspoon of fresh lemon juice, whisking until well emulsified.
- Arrange the macerated strawberries neatly in a chilled serving bowl or compose them artfully onto individual plates.
- Drizzle the prepared elderflower dressing over the strawberries, ensuring even distribution for flavor and presentation.
