- 1 medium-sized tomato, diced
- 1 clove garlic, minced
- 1/4 cup diced onion
- 1 teaspoon fresh thyme leaves

- 2 tablespoons fresh parsley, for garnish
- 2 tablespoons Parmesan cheese, for garnish
Instructions
- Begin by preheating your oven to 350°F (176°C).
- Rinse the peppers under cold running water and pat dry with a paper towel
- Stuff the peppers with the rice mixture, and place them in a ceramic baking dish.
- Pour 1/4 cup of water into the baking dish and cover with foil
- Once the peppers are cooked through, remove from the oven and serve with a sprinkle of fresh parsley and a dusting of Parmesan cheese
