Ingredients

  • 1/2 cup of organic ghee
  • 1/2 cup of freshly-picked neem leaves
  • 1/2 cup of premium-grade dates, pitted and chopped
  • 1 cup of blanched almond flour
  • 1/2 teaspoon of freshly-ground cardamom powder
  • 1/2 teaspoon of fine-grain sea salt

Instructions

  • In a medium saucepan over low heat, melt 1/2 cup of ghee until just melted
  • Add 1/2 cup of neem leaves and 1/2 cup of dates to the melted ghee and stir until the ingredients are well combined.
  • Increase the heat to medium-high and continue to stir the mixture until it thickens and becomes a paste
  • Remove the pan from heat and set aside.
  • In a medium bowl, combine 1 cup of almond flour, 1/2 teaspoon of cardamom powder, and 1/2 teaspoon of sea salt
  • Add the neem-date paste to the dry ingredients and stir until a firm dough forms
  • Transfer the dough to the parchment paper-lined baking pan and use your hands to press the dough into an even layer
  • Bake the fudge for 20-25 minutes or until golden-brown and fragrant
  • Remove from oven and let cool for at least 30 minutes before slicing into 16 squares
