  • Begin by preheating your oven to 375°F (190°C).
  • Peel and dice two large sweet potatoes into 1/2 inch cubes.
  • Place the sweet potato cubes on a parchment-lined baking sheet and lightly drizzle them with 1 tablespoon of avocado oil.
  • Roast the sweet potatoes in the oven for 20 minutes until they are golden brown and tender.
  • Meanwhile, heat 1 tablespoon of avocado oil in a large pot over medium heat.
  • Add 1 cup of diced onion and sauté until softened.
  • Add 2 cloves of minced garlic and 1 tablespoon of grated ginger and sauté for 2 minutes.
  • Add 1 tablespoon of curry powder, 1 teaspoon of ground cumin, 1/2 teaspoon of ground coriander, 1/4 teaspoon of ground turmeric, and 1/4 teaspoon of cayenne pepper and sauté for 1 minute.
  • Add 1 can of diced tomatoes, 1 can of coconut milk, 1/2 cup of vegetable broth, and 1 teaspoon of sea salt.
  • Simmer the mixture for 10 minutes.
  • Add the roasted sweet potato cubes and simmer for an additional 5 minutes.
  • Add 1/4 cup of chopped cilantro, 1/4 cup of chopped mint, and the juice of 1/2 lime.
  • Taste and adjust the seasonings if necessary.
  • Serve the sweet potato curry with a garnish of fresh herbs and a side of basmati rice.
