Ingredients
- 2 large sweet potatoes
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon salt, plus more to taste
- 1/2 teaspoon freshly ground black pepper
- 6 cups vegetable broth
- 2 sprigs fresh thyme
- 1 bay leaf
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Begin by pre-heating your oven to 375° F.
- Peel and dice the sweet potatoes into 1-inch cubes.
- Place the cubes onto a baking pan and lightly coat with olive oil, salt, and pepper.
- Bake for approximately 25 minutes or until the potatoes are tender.
- Meanwhile, heat a large pot over medium-high heat.
- Pour in the vegetable stock and add the thyme and bay leaf.
- Bring the soup to a boil, then reduce heat to low and simmer for 10 minutes.
- Add the roasted sweet potatoes and simmer for an additional 10 minutes.
- Remove from heat and use an immersion blender to purée the soup until smooth.
- Return to heat and season with salt and pepper to taste.
- Serve in warm bowls and garnish with fresh herbs.
