Ingredients

For the Peanut Butter Syrup:
- 1/2 cup natural peanut butter
- 1/2 cup maple syrup or honey
- 1/4 cup almond milk or water as needed for consistency
For Garnish:
- Banana slices
- Crushed peanuts optional
Instructions
Prepare the French Toast Batter:
- Dip each slice of bread into the batter, ensuring both sides are well-coated.
Cook the French Toast:
- Heat ghee in a non-stick skillet or griddle over medium heat.
- Fry each slice of bread until golden brown on both sides. Set aside and keep warm.
Make the Peanut Butter Banana Mousse:
- In a blender, combine the mashed banana, peanut butter, maple syrup, and vanilla extract until smooth.
Prepare the Peanut Butter Syrup:
- In a small saucepan, gently warm the peanut butter and maple syrup, whisking until combined. Thin with almond milk or water to desired consistency.
Assemble the French Toast:
- Cut a pocket into each slice of fried French toast.
