Ingredients
- 2 apples, peeled and cored
- 1 cup rolled oats
- ½ cup unsweetened shredded coconut
- 2 tablespoons coconut oil
- 2 tablespoons honey
- ½ teaspoon sea salt
- 1 teaspoon ground cinnamon
- ⅛ teaspoon ground cardamom
Instructions
- Preheat oven to 350°F.
- In a medium bowl, combine 1 cup of rolled oats, ½ cup of unsweetened shredded coconut, and ½ teaspoon of sea salt.
- Spread the mixture onto a parchment-lined baking sheet
- Remove the toasted oat mixture from the oven and set aside.
- In a medium bowl, combine 2 tablespoons of coconut oil, 2 tablespoons of honey, 1 teaspoon of cinnamon, and ⅛ teaspoon of cardamom.
- Heat a large skillet over medium heat and add the coconut oil mixture.
- Peel and core 2 apples, then dice into small cubes
- Cook the apples for 10-12 minutes, stirring occasionally, until they are softened and lightly browned.
- Add the toasted oat mixture to the skillet, stirring to combine.
- Reduce the heat to low and cook for an additional 2-3 minutes, stirring occasionally, until the oats and apples are evenly mixed and lightly toasted.
- Remove from heat and transfer to a serving bowl
