- • 2 tablespoons of extra-virgin olive oil
- • 1 onion, chopped
- • 1 carrot, chopped
- • 1 celery stalk, chopped
- • 1 clove garlic, minced

- • 2 cups vegetable broth
- • 2 cups water
- • 2 tomatoes, diced
- • 1/2 teaspoon kosher salt
- • 1 cup aged basmati rice
- • 1/4 cup chopped fresh basil
- • Drizzle of extra-virgin olive oil (optional)
- • Fresh basil leaves, for garnish (optional)
Instructions
- Begin by bringing a pot of salted water to a boil
- Once boiling, add 1 cups of aged basmati rice
- Meanwhile, in a separate pot, heat 2 tablespoons of olive oil over medium-high heat
- Add 1 clove of garlic, minced, and 1 teaspoon of dried oregano
- Add 2 cups of vegetable broth, 2 cups of water, 2 diced tomatoes, and 1/2 teaspoon of kosher salt
- Once the rice is cooked, add it to the soup and simmer for 5 minutes
- Turn off the heat and stir in 1/4 cup of chopped fresh basil
- Serve the soup with a drizzle of olive oil and fresh basil, if desired.
