Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 3 large eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 6 tablespoons (3/4 stick) butter, melted
- 5 ounces cream cheese, softened
- ½ cup granulated sugar
- 2 teaspoons freshly squeezed lemon juice
- 4 ounces white chocolate, melted
- A handful of fresh violet petals
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium-sized bowl, combine the flour, baking powder, and salt
- In a separate bowl, beat the eggs, vanilla, and butter together until the mixture is light and creamy.
- Gradually add the dry ingredients to the wet ingredients and mix until everything is fully incorporated.
- On a lightly floured work surface, roll the dough into a thin sheet about 1/4 of an inch thick
- Place the rectangles on a parchment-lined baking sheet and gently press each one down with a fork.
- Bake for 15 to 20 minutes, until the eclairs are golden brown.
- Once the eclairs have cooled, make the filling
- To assemble the eclairs, cut each one lengthwise and pipe the filling into the center.
- To finish the eclairs, dip each one in a bowl of melted white chocolate and top with a few violet petals.
