Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 3 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 6 tablespoons (3/4 stick) butter, melted
  • 5 ounces cream cheese, softened
  • ½ cup granulated sugar
  • 2 teaspoons freshly squeezed lemon juice
  • 4 ounces white chocolate, melted
  • A handful of fresh violet petals

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a medium-sized bowl, combine the flour, baking powder, and salt
  • In a separate bowl, beat the eggs, vanilla, and butter together until the mixture is light and creamy.
  • Gradually add the dry ingredients to the wet ingredients and mix until everything is fully incorporated.
  • On a lightly floured work surface, roll the dough into a thin sheet about 1/4 of an inch thick
  • Place the rectangles on a parchment-lined baking sheet and gently press each one down with a fork.
  • Bake for 15 to 20 minutes, until the eclairs are golden brown.
  • Once the eclairs have cooled, make the filling
  • To assemble the eclairs, cut each one lengthwise and pipe the filling into the center.
  • To finish the eclairs, dip each one in a bowl of melted white chocolate and top with a few violet petals.
