Ingredients
- 6 large bell peppers
- 2 cups cooked quinoa
- 1 package crumbled tofu
- 1 can diced tomatoes
- 1 chopped onion
- 2 cloves garlic, minced
- ½ teaspoon cumin
- ½ teaspoon smoked paprika
- ½ teaspoon chili powder
- Salt and freshly ground black pepper, to taste
- 2 tablespoons vegan cheese, for topping
Instructions
- Cut the bell peppers in half and remove the seeds.
- Place the bell peppers in a baking dish.
- Stuff the bell peppers with the quinoa mixture and top with a sprinkle of vegan cheese.
- Bake for 20–25 minutes, until the bell peppers are tender and the cheese is melted and lightly browned.
- Remove from oven and serve warm.
