Instructions

  • Cut the bell peppers in half and remove the seeds.
  • Place the bell peppers in a baking dish.
  • In a medium bowl, combine the cooked quinoa, crumbled tofu, diced tomatoes, chopped onions, garlic, and spices.
  • Stuff the bell peppers with the quinoa mixture and top with a sprinkle of vegan cheese.
  • Bake for 20–25 minutes, until the bell peppers are tender and the cheese is melted and lightly browned.
