  • Begin by gathering all of the necessary ingredients: 2 cups of diced carrots, 1 cup of diced celery, 1 cup of diced onion, 1 cup of pearl barley, 2 cloves of garlic, 6 tablespoons of olive oil, 10 cups of vegetable broth, 1 teaspoon of chopped fresh thyme, 1 teaspoon of chopped fresh parsley, and salt and pepper to taste.
  • Heat the olive oil in a large pot over medium heat.
