- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced sweet potatoes
- 1 can (14.5 ounces) chickpeas, drained and rinsed
- 1 can (14.5 ounces) coconut milk
- 1 cup vegetable broth
- Himalayan pink salt and freshly ground black pepper, to taste
- Cooked basmati rice, for serving
- Fresh cilantro and toasted cashews, for garnish
Instructions
- Begin your journey with a mindful intention of creating a nourishing and nurturing dish
- Heat a large pot over medium-high heat, and add 1 tablespoon of ghee or coconut oil
- Add 1 tablespoon of finely minced ginger and 1 tablespoon of garlic, sauté for 1 minute, stirring constantly.
- Add 1 teaspoon of curry powder, 1 teaspoon of ground coriander, and 1 teaspoon of turmeric
- Add 1 cup of diced carrots, 1 cup of diced celery, and 1 cup of diced sweet potatoes
- Add 1 can of chickpeas, drained and rinsed
- Pour in 1 can of coconut milk and 1 cup of vegetable broth
- Simmer for 15-20 minutes, or until the vegetables are tender and the sauce has thickened.
- Taste and adjust seasoning if desired.
- Serve warm over cooked basmati rice, and garnish with fresh cilantro and toasted cashews.
