Ingredients

  • 2 tablespoons of extra-virgin olive oil
  • 1 cup diced onion
  • 1/2 cup diced garlic
  • 2 cups diced carrots
  • 1/2 cup finely chopped parsley

  • 2 1/2 cups vegetable broth
  • 1 1/2 cups couscous

Instructions
