- 2 tablespoons of extra-virgin olive oil
- 1 cup diced onion
- 1/2 cup diced garlic
- 2 cups diced carrots
- 1/2 cup finely chopped parsley
- 1/4 cup finely chopped oregano
- 1/4 cup finely chopped mint
- 2 1/2 cups vegetable broth
- 1 1/2 cups couscous
- Salt and pepper to taste
Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium heat
- Add the diced carrots, parsley, oregano, and mint and stir to combine
- Add 2 1/2 cups of vegetable broth and bring to a boil.
- Once boiling, add 1 1/2 cups of couscous and stir to combine
- After 10 minutes, remove the pot from the heat and let sit for 5 minutes
- Serve the Vegetable and Herb Couscous hot and enjoy!
