  • 2 tablespoons ghee
  • 1 white onion, finely chopped
  • A pinch of sea salt
  • 1 cup diced carrot
  • 1 cup diced celery
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 6 cups vegetable broth
  • 1 cup rye grains
  • 1 teaspoon freshly ground black pepper
  • 1 can diced tomatoes
  • 1 can chickpeas
  • 1 tablespoon freshly chopped parsley
  • A pinch of sea salt
  • Freshly grated Parmesan cheese, for serving

Instructions

  • Begin by heating 2 tablespoons of ghee in a large, heavy pot
  • Next, add in 1 cup of diced carrot, 1 cup of diced celery, 2 cloves of minced garlic, and 1 teaspoon of paprika
  • Pour in 6 cups of vegetable broth, 1 cup of rye grains, and 1 teaspoon of freshly ground black pepper
  • Reduce the heat to medium-low and simmer, uncovered, for 30 minutes or until the rye grains are tender.
  • When the rye grains are cooked, add in 1 can of diced tomatoes and 1 can of chickpeas
  • Finally, stir in 1 tablespoon of freshly chopped parsley and a pinch of sea salt
  • Serve warm with a sprinkle of freshly grated Parmesan cheese.
