Ingredients
- 2 tablespoons ghee
- 1 white onion, finely chopped
- A pinch of sea salt
- 1 cup diced carrot
- 1 cup diced celery
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 6 cups vegetable broth
- 1 cup rye grains
- 1 teaspoon freshly ground black pepper
- 1 can diced tomatoes
- 1 can chickpeas
- 1 tablespoon freshly chopped parsley
- A pinch of sea salt
- Freshly grated Parmesan cheese, for serving
Instructions
- Begin by heating 2 tablespoons of ghee in a large, heavy pot
- Pour in 6 cups of vegetable broth, 1 cup of rye grains, and 1 teaspoon of freshly ground black pepper
- Reduce the heat to medium-low and simmer, uncovered, for 30 minutes or until the rye grains are tender.
- When the rye grains are cooked, add in 1 can of diced tomatoes and 1 can of chickpeas
- Finally, stir in 1 tablespoon of freshly chopped parsley and a pinch of sea salt
- Serve warm with a sprinkle of freshly grated Parmesan cheese.
