Ingredients

  • 2 tablespoons of vegetable oil
  • 2 cloves of garlic, minced
  • 1 teaspoon of ginger, minced
  • 1 onion, chopped
  • 1 teaspoon of curry powder
  • 1 red bell pepper, chopped
  • 2 cups of vegetable broth
  • 1/2 teaspoon of cumin
  • 1/2 teaspoon of turmeric
  • 1/2 teaspoon of red pepper flakes
  • 1 can of chickpeas, drained and rinsed
  • 1 can of diced tomatoes
  • 1 package of extra-firm tofu, drained and cubed
  • 1/4 cup of coconut milk
  • 1/4 cup of fresh cilantro, chopped
  • Sea salt and freshly ground black pepper, to taste
  • Cooked rice, for serving

Instructions

  • Heat a large saucepan over medium-high heat
  • Add 2 cloves of minced garlic and 1 teaspoon of minced ginger
  • Add 1 chopped onion and 1 teaspoon of curry powder
  • Add 1 chopped red bell pepper and 2 cups of vegetable broth
  • Add 1/2 teaspoon of cumin, 1/2 teaspoon of turmeric, and 1/2 teaspoon of red pepper flakes
  • Add 1 can of drained and rinsed chickpeas, 1 can of diced tomatoes, and 1 package of extra-firm tofu (drained and cubed)
  • Add 1/4 cup of coconut milk and 1/4 cup of chopped cilantro
  • Taste and adjust seasoning as desired
  • Serve with cooked rice and sprinkle with extra cilantro.
