- 2 tablespoons of vegetable oil
- 2 cloves of garlic, minced
- 1 teaspoon of ginger, minced
- 1 onion, chopped
- 1 teaspoon of curry powder
- 1 red bell pepper, chopped
- 2 cups of vegetable broth
- 1/2 teaspoon of cumin
- 1/2 teaspoon of turmeric
- 1/2 teaspoon of red pepper flakes
- 1 can of chickpeas, drained and rinsed
- 1 can of diced tomatoes
- 1 package of extra-firm tofu, drained and cubed
- 1/4 cup of coconut milk
- 1/4 cup of fresh cilantro, chopped
- Sea salt and freshly ground black pepper, to taste
- Cooked rice, for serving
Instructions
- Heat a large saucepan over medium-high heat
- Add 2 cloves of minced garlic and 1 teaspoon of minced ginger
- Add 1 chopped onion and 1 teaspoon of curry powder
- Add 1 chopped red bell pepper and 2 cups of vegetable broth
- Add 1/2 teaspoon of cumin, 1/2 teaspoon of turmeric, and 1/2 teaspoon of red pepper flakes
- Add 1 can of drained and rinsed chickpeas, 1 can of diced tomatoes, and 1 package of extra-firm tofu (drained and cubed)
- Add 1/4 cup of coconut milk and 1/4 cup of chopped cilantro
- Taste and adjust seasoning as desired
- Serve with cooked rice and sprinkle with extra cilantro.
