Ingredients
- 1 cup black rice, soaked for at least 3 hours
- 1 package vermicelli
- 1 cup mushrooms, diced
- 2 cups vegetable broth
- 1/2 cup peas
- 1 bell pepper, diced
- 1 tablespoon sesame oil
- 1 lime, juiced
- Cilantro and avocado slices, for garnish
Instructions
- Heat a large pan over medium heat and add the vermicelli
- Add the mushrooms and sauté until they are lightly browned and fragrant
- Pour in the vegetable broth and bring to a simmer.
- Drain the black rice and add to the pan
- Add in the peas and bell pepper and cook for an additional 5 minutes.
- When the rice is cooked, turn off the heat and add the sesame oil and lime juice.
- Serve the Vibrant Vermicelli & Veggies Black Rice Bowl in individual bowls, garnished with cilantro and avocado slices
