Instructions
- Preheat your oven to 350°F (177°C) with a rack positioned in the middle.
- In a medium-sized mixing bowl, combine 1 cup of finely chopped walnuts with 1/2 cup of spelt flour and 1/4 teaspoon of kosher salt, stirring to distribute the ingredients evenly.
- Melt 3 tablespoons of ghee and 2 tablespoons of coconut oil in a small saucepan over medium-low heat, ensuring they are well combined and liquified.
- Remove the melted ghee and coconut oil from heat and mix in 4 tablespoons of maple syrup, stirring until the mixture is homogenous.
- Pour the wet mixture into the bowl containing the dry ingredients and use a spatula or a wooden spoon to fold the mixture together until you achieve a sandy, crumbly consistency.
- Slice a loaf of spelt bread into 1/2 inch thick slices, and lightly toast them in a toaster or on a baking sheet in the preheated oven until they are just starting to crisp on the edges, about 3-4 minutes.
- Spread a thin layer of coconut oil on one side of each toasted bread slice to provide a moisture barrier that prevents sogginess.
- Generously scatter the walnut and maple crumble mixture over the coconut oil-brushed side of each toast, creating a thick layer that covers the surface entirely.
- Place the crumb-coated toasts onto a baking sheet lined with parchment paper, maintaining a small distance between each piece for even baking.
- Return the baking sheet into the oven and bake for 8-10 minutes, or until the topping is golden brown and the walnuts have released their fragrance.
- While the toast is baking, prepare the maple drizzle by whisking together 2 tablespoons of maple syrup with 1 tablespoon of melted ghee until the mixture is emulsified.
- After the toast is finished baking, allow it to cool for 2-3 minutes on the baking sheet to let the topping set slightly.
- Transfer the toast to a serving platter and drizzle each slice with the maple and ghee mixture, distributing it evenly for maximum flavor.
