Ingredients
- 3 cups of organic, fresh or frozen cherries
- 1/3 cup of raw honey or pure maple syrup
- 1/2 teaspoon of freshly ground cardamom
- 1/4 teaspoon of freshly ground cinnamon
- 2 cups of organic plain yogurt
- 2 tablespoons of pure rose water
- 2 teaspoons of freshly squeezed lime juice
- A pinch of Himalayan pink salt
Instructions
- Gather your ingredients: 3 cups of frozen cherries, 1/3 cup of honey or maple syrup, 1/2 teaspoon of ground cardamom, 1/4 teaspoon of ground cinnamon, 2 cups of plain yogurt, 2 tablespoons of rose water, 2 teaspoons of fresh lime juice, and a pinch of salt.
- Place the frozen cherries in a medium saucepan
- Cook the mixture over medium-high heat, stirring occasionally, until the cherries are soft and the liquid has thickened, about 10 minutes.
- Remove the saucepan from the heat and let cool.
- In a blender, combine the yogurt, rose water, lime juice, and cooled cherry mixture
- Taste and adjust seasonings if needed.
- Serve the lassi chilled or over ice.
