- Rinse and drain the white beans before adding them to a medium-sized pot.
- Fill the pot with 8 cups of water and bring to a low boil.
- Once the water is boiling, reduce the heat to low and cover the pot with a lid
- Simmer the soup for another hour, until all of the vegetables are tender.
- Add the thyme and bay leaves, and season the soup with salt and pepper.
- Simmer for an additional 20 minutes, stirring occasionally.
- Remove the bay leaves and thyme sprigs from the pot.
- Use an immersion blender to purée the soup, or transfer it to a blender and blend until smooth.
- Serve the soup warm, garnished with fresh herbs and a sprinkle of sea salt
