Ingredients

  • 2 cups dried white beans
  • 8 cups water
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 2 sprigs of thyme
  • 2 bay leaves
  • Sea salt and black pepper, to taste
  • Fresh herbs, for garnish (optional)

Instructions

  • Begin by gathering all of your ingredients
  • Rinse and drain the white beans before adding them to a medium-sized pot.
  • Fill the pot with 8 cups of water and bring to a low boil.
  • Once the water is boiling, reduce the heat to low and cover the pot with a lid
  • Once the beans have softened, add the diced onions, carrots, celery, and garlic.
  • Simmer the soup for another hour, until all of the vegetables are tender.
  • Add the thyme and bay leaves, and season the soup with salt and pepper.
  • Simmer for an additional 20 minutes, stirring occasionally.
  • Remove the bay leaves and thyme sprigs from the pot.
  • Use an immersion blender to purée the soup, or transfer it to a blender and blend until smooth.
  • Serve the soup warm, garnished with fresh herbs and a sprinkle of sea salt
