- 2 cups raw, organic cashews
- 2 cups all-purpose flour
- 2 teaspoons ground cardamom
- 1 teaspoon baking soda
- 1/2 teaspoon sea salt
- 3/4 cup unsalted butter, softened
- 1 cup firmly packed light brown sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1 cup white chocolate chips
Instructions
- Preheat oven to 350°F
- Place the cashews in a food processor and pulse until a course meal is created.
- In a medium bowl, whisk together the cashew meal, all-purpose flour, cardamom, baking soda, and salt.
- Beat in the egg, then stir in the vanilla extract.
- Slowly add the dry ingredients to the wet, stirring until just combined.
- Gently fold in the white chocolate chips.
- Scoop out the dough into 1-inch balls and place on the prepared baking sheets.
- Bake for 8-10 minutes, until lightly browned
