- 1/2 cup white chocolate finely chopped
- 1/4 cup grass-fed whole milk or almond milk
Instructions
- Prepare the Crepe Batter:
- In a bowl, whisk together the flour, matcha powder, and salt.
- In another bowl, beat the eggs and then mix in the milk, melted ghee, maple syrup or honey, and vanilla extract.
- Gradually add the wet ingredients to the dry, mixing until the batter is smooth. Let the batter rest for 30 minutes.
- Cook the Crepes:
- Heat a non-stick skillet or crepe pan over medium heat. Lightly grease with a bit of ghee.
- Pour a small amount of batter into the center of the pan, swirling it to spread thinly.
- Cook until the edges lift slightly, then flip and cook the other side. Keep crepes warm.
- Make the Matcha White Chocolate Cream Filling:
- Gently heat the cream in a saucepan, then whisk in the matcha powder until smooth.
- Pour the hot matcha cream over the chopped white chocolate and stir until melted and creamy.
