- 2 cups (250g) white wheat flour
- 2 cups (250g) whole wheat flour
- 2 teaspoons (16g) baking powder
- 2 teaspoons (6g) salt
- 8 tablespoons (120g) cold butter
- 2 cups (480ml) cold buttermilk
- 2 large eggs
- 12-14 white asparagus spears
- 4 tablespoons (60g) shredded Parmesan cheese
Instructions
- In a large bowl, stir together 1 cup (125g) white wheat flour, 1 cup (125g) whole wheat flour, 1 tsp (8g) baking powder, and 1 tsp (3g) salt.
- Cut 4 tbsp (60g) cold butter into small cubes, then add to the dry ingredients
- Whisk together 1 cup (240ml) cold buttermilk and 1 large egg.
- Pour the wet ingredients into the dry ingredients and mix with a spatula until all the flour is moistened.
- Turn the dough onto a lightly floured surface and knead gently until it forms a soft, pliable dough.
- Using a rolling pin, roll the dough into a rectangle about 8x10 inches (20x25cm).
- Arrange one layer of white asparagus spears on top of the dough, then sprinkle with 2 tbsp (30g) shredded Parmesan cheese.
- Carefully roll the dough up into a log, pinching the ends to seal in the asparagus and cheese.
- Place the log onto a greased baking sheet and bake for 30 minutes or until golden brown.
- Let cool for 10 minutes before slicing and serving.
