Ingredients

  • 2 cups (250g) white wheat flour
  • 2 cups (250g) whole wheat flour
  • 2 teaspoons (16g) baking powder
  • 2 teaspoons (6g) salt
  • 8 tablespoons (120g) cold butter
  • 2 cups (480ml) cold buttermilk
  • 2 large eggs
  • 12-14 white asparagus spears
  • 4 tablespoons (60g) shredded Parmesan cheese

Instructions

  • In a large bowl, stir together 1 cup (125g) white wheat flour, 1 cup (125g) whole wheat flour, 1 tsp (8g) baking powder, and 1 tsp (3g) salt.
  • Cut 4 tbsp (60g) cold butter into small cubes, then add to the dry ingredients
  • Whisk together 1 cup (240ml) cold buttermilk and 1 large egg.
  • Pour the wet ingredients into the dry ingredients and mix with a spatula until all the flour is moistened.
  • Turn the dough onto a lightly floured surface and knead gently until it forms a soft, pliable dough.
  • Using a rolling pin, roll the dough into a rectangle about 8x10 inches (20x25cm).
  • Arrange one layer of white asparagus spears on top of the dough, then sprinkle with 2 tbsp (30g) shredded Parmesan cheese.
  • Carefully roll the dough up into a log, pinching the ends to seal in the asparagus and cheese.
  • Place the log onto a greased baking sheet and bake for 30 minutes or until golden brown.
  • Let cool for 10 minutes before slicing and serving.
